Because we love when his petilla the effervescents are always a way to celebrate something. They remind us of the end of the year parties and the summer evenings by the pool with friends and family. It’s like a reunion look.

One thing is sure: to make good natural sparkling you must know how to master the fermentation stop technique at the right time. The natural sparkling is simply wine worked on the ancestral method, also called rural or artisanal, it consists in allowing the wine to stop its fermentation in the vat alone before the bottle. Place where alcoholic fermentation will end.
The origin of the natural sparkling wine in history comes from very far, in 1531 at the Abbey of St Hilaire in Occitania, production by the Benedictine monks who have always produced sparkling wine in ancestral method (you can find this story on our article « En Prise de Mousse : Pop ! » ). Since then, sparkling wine has evolved and today they are found everywhere in France, as well as in the world. The specifications remain particular to each appellation d’origine contrôlée for the so-called ancestral methods, in return a notebook of dedicating only to the “ Pet Nat” does not exist.
It was in Montlouis sur Loire, in the Loire Valley, that the first wine of AOC appeared. In 2020 the Montlouis wine union obtained the agreement of the Institut National de l’Origine et de la Qualité (INAO) so that the single fermentation firmvescent is recognized. Since then, there has been a very strict application for the Original Controlled Original Call.

Mostly from 100% of the Muscat vines aged 35 to 50 years this sparkling expresses the elegance and minerality marked on this grape variety worked on a granite terroir. The freshness is intense. The aromas of white flowers are as its name of the cuvée indicates - Dragon Bull - marked and filled the palace once tasted. Soy, it’s an easy to marry wine. Fermentation started in a vat and finished in a bottle: it’s the fart! Organic agricultural certification and worked in biodynamic knowledge (demeter certified). Not filtered.
