Nestled amongst the sun-drenched hillsides of Eauze, in the Gers (south-west France), the Domaine de Pajot has, for over forty years, embodied a family history deeply rooted in the Gascon terroir, organic viticulture, and the production of Armagnac and wines from the south-west.
In the 1970s, Edmond Barreau, a farmer originally from the Nord region, acquired this land in the hamlet of Le Pajot with the aim of creating a vineyard dedicated to Armagnac. He entrusted this project to his son Jean, before Damien, representing the third generation, took over the estate with a committed vision. A pioneer, he converted the vineyard to organic farming as early as 2001, demonstrating a deep respect for life, the soil and natural cycles.
Today, Clément and his wife Sarah, representing the fourth generation, continue this momentum by combining family expertise, sustainable innovation and responsible viticulture. The estate is developing practices such as agroforestry, eco-grazing with sheep and wine tourism in the Gers, offering an authentic immersion in the heart of the vineyard.

The Domaine de Pajot thus reflects the full richness of Gascony’s wines, combining freshness, balance and fruit expression, set in an exceptional natural environment with views of Eauze and, on a clear day, the Pyrenees mountain range.
