One thing is certain: to make good natural sparkling you have to master the technique of stopping fermentation at the right time. The natural sparkling wine is simply an ancestrally worked wine, also called rural or artisanal, it consists of letting the wine stop fermentation in a vats all by itself before bottling. Where alcoholic fermentation will end.
The origin of natural sparkling wine in history comes from far away, in 1531 at the Abbey of St Hilaire in Occitanie, produced by Benedictine monks who have always produced sparkling wine in ancestral method (you can find this story on our article Taking Mousse : Pop!"). The specification remains specific to each controlled label of origin for the so-called ancestral methods, in return a specification dedicated only to the " Pet Nat" does not exist.
It was in Montlouis sur Loire, in the Loire Valley, that the first wine of AOC appeared. In 2020 the Montlouis wine union obtained the agreement of the National Institute of Origin and Quality (INAO) to make the unique fermentation effervescent known. Since then, a very strict specification exists for the Designation of Origin Controlled Sparkling Origin.

Mostly from the vines of Muscat aged 35 to 50 years, this sparkling expression expresses the elegance and minerality marked on this vine worked on a granitic terroir. The freshness is intense. The aromas of white flowers are as its name of the cuvée indicates - Dragon Bull - marked and filled the palate once tasted. Silky, it's an easy wine to marry. Fermentation started in a tank and finished in a bottle: it's far nat! Certified organic agriculture and worked in the know-how of biodynamics (certified demeter). Not filtered.
