The First Cuvée Extra Brut, signed by Bruno Paillard House, is a very personal interpretation of the entire region. It is the fruit of more than 30 wines from the most noble terroirs of Champagne, whose composition is kept secret.
Selection of the first press of Pinot Meunier (22%), Chardonnay (33%) and Pinot Noir (45%), part (20%) made its first fermentation in cask. In addition to the reserve wines, 25 vintages assembled since 1985 in proportion up to 50%.
A long farm in the s?opère cellar, 3 years on lees followed by 5 months minimum after defrosting. The dosage, Extra-Brut (less than 6g/L).
